Cold Tomato & Summer Vegetable Soup

fresh, ripe tomatoes, seeded and chopped

cucumber, peeled, seeded, chopped

red bell pepper, chopped

teaspoon chopped fresh oregano (or pinch of dry)

hot sauce (optional)
 

 Combine all ingredients in a large bowl. Adjust seasonings to taste. Prepare a day ahead for better flavor.
