Cilantro Lime Vinaigrette

cup lime juice |

cup white vinegar |

bunches cilantro chopped |
1/4 |
cup honey |
1/4 |
cup brown sugar |

teaspoon salt |
1 |
tablespoon fresh garlic |
3 |
tablespoons dijon mustard |
3 |
cups salad oil |
Puree cilantro, lime juice and vinegar in a food processor or blender. Add sugar, honey, garlic and salt. Puree until smooth. Add mustard, then slowly add oil in a thin stream while continuously blending.
Yield: About 4 cups
Note: This recipe can be easily halved.
