Herbal Vinegars

Herbal vinegars are very easy to make. The herbs that you use are only limited by your imagination. Purple basi Rosemary, Lemon Balm, Thymes, Mints and Tarragon all make tasty vinegars. It is also fun to try different combinations of herbs: Lemon Balm, Lemon Thyme and Corriander seeds are great with fish. Peppercorns, Rosemary, Oregano and Chives makes a hearty vinegar.

The method is simple. Place your harvested herbs and spices in a large glass container. Fill the container with either wine, cider or rice vinegar, then cover. Never use metal utensils or lids. Place the vinegar in a bright location for about two weeks. Shake the mixture daily. Strain the flavored vinegar into decorative bottles, adding herb sprigs. Close the top with a cork or similar stoppers. The vinegar is good for about six months.
